Easy Greek recipe for Greek Easter?!
My boyfriend's Greek, but we can't visit his family this easter!.
So I'm already going to dye some eggs red, but I would like to cook something Greek for dinner for him!. I'm an OK cook, not the world's greatest, so nothing too complicated!.
Does anyone have a good recipe or know of one online!?

Traditionally Greeks keep a very simple vegetarian diet up until Easter Sunday, mostly consisting or beans pulses and green vegetables during this time they also cut down on olive oil!.
Easter Sunday sees a feast centred a round a lamb starting with mayeritsa ( a soup made of the lamb offal) followed by the whole roast lamb with potatoes and a village(Greek) salad and followed by kourabiethes (shortbread almond cookies)
You may not want to do the soup but you can simulate the lamp by roasting a leg of lamb spiked with slivers of garlic and rosemary surrounded by roast potatoes, about 30 minutes before you are ready to serve squeeze the juice of 2 lemons over the meat and potatoes !. hummus is easy some chick peas soaked over night a little garlic some lemon juice a little tarhini 1/4 cup of olive oil i like a little yogurt in a couple of tablespoons blend untill creamy and serve with lavash breadWww@FoodAQ@Com
Most of the Greek dishes I can think of are a little bit complicated!.!.!. but what about chicken kabob and Greek salad!?
You can get Greek dressing at the grocery store, use it on the salad and to marinade chicken tenders!. Grill the chicken!. For the salad, you just need lettuce, tomato, red onion, feta and Greek olives!.Www@FoodAQ@Com

Start with avgelemeno soup (egg-lemon) -- look it up on internet!.
Then salad with pita if you can make or buy it -- and a cucumber dip!.
Greek salad:
Ingredients
2 (10 ounce) bags ready-to-eat mixed greens
1 (6 ounce) can pitted ripe olives, drained
1/4 cup Italian vinaigrette dressing
1 (7 ounce) jar marinated artichoke hearts, undrained
1/4 cup crumbled feta cheese
1 small zucchini, thinly sliced
Directions
Toss greens and olives in a large bowl!.
Toss with dressing and artichoke hearts with marinade!.
Sprinkle cheese over salad
Cucumber dip: In Greek: τζατζ?κι, pronounced dza-DZEE-kee
Tzatziki is traditionally served as an appetizer and can be left on the table as an accompaniment to foods throughout the meal!. The key to great tzatziki is the thick creamy texture that allows it to be eaten alone, as a dip, as a spread, and as a condiment!.
16 ounces (2 cups) of strained yogurt
4 to 10 cloves of garlic, finely chopped
1/2 cup of diced or grated cucumber
1 tablespoon of olive oil
2 teaspoons of lemon juice
Prepare all ingredients in advance!. Combine oil and lemon juice in a medium mixing bowl!. Fold the yogurt in slowly, making sure it mixes completely with the oil!. Add the garlic, according to taste, and the cucumber!.

STIFADO Beef, tomato and onion stew
Any lean stewing beef will do!.
6 servings
1 ? kilos beef or 3!.5 lbs (any sort)
1 kilo small onions 2lb ish
1 teacup olive oil
1 teacup vinegar
2-3 large ripe tomatoes finely choppped
Rosemary ( or Lucy )
1 bay leaf ( if you have one )
2 cloves garlic crushed
some red wine
Pepper corns ( Or not )
Cut the beef into cubes!. Heat the olive oil over at a low heat and brown the meat!. Add the onions and allow these to simmer for about 5 minutes!.
Add the rest of the ingredients and allow to boil for about two hours, until the sauce thickens!. Serve hot!. Or if you are in Greece luke warm

I left this in the oven on very low for about 5 or 6 hours once and it was the softest beef I have ever tasted!. Do this if you have time to!.Www@FoodAQ@Com
