It's called "Butter Chicken", and in India they also call it Chicken Makhani!. It originated in North India and was inspired by tandoori chicken!. Makhani by definition is butter, so a recipe without butter is not really butter chicken!. In the USA, most butter chicken receipes are modified significantly!. I have made butter chicken with yoghurt, cream, or typically sour cream, depending on what I was going for!. But they ALL use butter!. You can make the same recipe and omit the butter, and it still tastes great and is incredibly high in fat!.Www@FoodAQ@Com

In India, the dish is called Murgh Makhani which translates directly into Butter Chicken!.

The traditional dish is made using ghee (clarified butter) and finished off with "malai" (cream)!. To lighten the dish & make it healthier, many recipes have substituted using canola oil for the ghee or butter!. also, yogurt can be used in place in the cream!.Www@FoodAQ@Com
