Have on hand @ all times in the pantry: corn tortillas, green tomatillos, white onions, paprika, vegetable oil, rice, garlic, cilantro, roasts or steaks in the freezer to season up and place in the oven, Cornish hens, cans of hominy, cans of pinto beans, or if u wanna make them fresh bags of pintos, Serrano and guadilallio peppers, whole chickens for soup, limes, radishes, green onions, tomatoes, and then just ask him what he likes by pointing, or eye fully watching his mom and watching how she makes things so that when u guys get your own place you know how to make what he was raised on!. Great luck!.Www@FoodAQ@Com
And I guess his mom doesn't speak english, right!?
Does your boyfriend know how to cook!?
Well, mexican food is not that hard really, at least the everyday meal!. Food like chile en nogada is difficult, or mole, but there are easy things you can learn!.
Most people know tacos or enchiladas as mexican food, but you can prepare rice, beans and meat or chicken with potato or tomato and onion and that's ok, you might already notice we (mexicans) eat anything with tortillas!.
Is really difficult for me to tell you exactly what to cook since I don't live there and I don't know what you can buy, so my advice is to buy a book of mexican food or find recipies online!. Take notes of the food your boyfriend's mom prepare and ask your boyfriend what he likes to eat!.Www@FoodAQ@Com

You probably need to get his Mom or a Sister to give you some pointers!. Real Mexican food is totally different than the way we prepare it in America!. I cook really good Tex-Mex and I'm sure your boyfriend and his family would get a laugh out of my cooking!. They do everything from scratch, right down to the tortillas!. Good Luck and I Wish You Much Happiness and Good Cooking!.Www@FoodAQ@Com
Get a pressure cooker so you can have black (or pinto) beans at all time, also chiles, cilantro, tomatoes and onions are the basics for salsa witch is a must!. Usually we have rice with every meal, you can make it white or red (with tomatoes)
Just look for a specific recipe online and don't worry, my husband didn't speak a word of spanish when we got married and he survived the culture shock!.Www@FoodAQ@Com

Well, I would suggest a cookbook!. You don't have to speak Spanish to learn how to make Mexican food, unless you are being taught by someone who doesn't speak English!.
I would say research the culture, and also ask your boyfriend what he likes the most, and learn to make that!. It may turn out that he likes more than Mexican foods!.Www@FoodAQ@Com
