Grouse or Guinea fowl!. The Scots hang their game birds longer than in most other countries giving them a very distinctive flavor that I particularly like!.

I am a former chef and of Scotish history, and anything is fine with me, I like the mussels from a palce in Glasgow, affectionatly called "Clappy Doo's", huge steamed with veg and wine!.
I was out with some friends and we stopped in a fish and chip shop at 2 am and I saw on the board "Deep Fried Haggis with Curry Sauce" and just had to have it, with big pile if chips, it hit the spot after drinking a few pints of Tennants all night!.Www@FoodAQ@Com
