if you plan to cook and the ingredients calls for chinese wine, I am very certain that you could do the dish without it and wouldnt cause harm to the taste factor of the dish, as in chinese cooking, chinese wine is only an enhancer, so if you dont have chinese wine or you dont want to use it, it is definitely ok!. !. !. and if you want to enhance the flavor of the dish it is best to mantain the seasoning and add a bit of sugar or if you want to use MSG, you could put a pinch which does a lot to the dish!. !. !.Www@FoodAQ@Com

There are a number of different Chinese wines, but rice wine is the one common in recipes, so that's probably the one you're interested in!.

You can substitute apple juice or white grape juice!. It's not exactly the same flavor, but is a decent substitute!. The juices are slightly acidic, so they substitute in their marinading/tenderizing effects, not just flavor!.Www@FoodAQ@Com

try rice wine vinegar, you can get it at the grocery store!.Www@FoodAQ@Com
