Question: Any new li hing mui powder ideas!?
I tried pineapple tossed with li hing powder while on vacation in Hawai'i a few years ago and fell in love with it!. For those of you who enjoy it, what is your favorite way to use it!? I'm looking for something new!.Www@FoodAQ@Com

shine said it!.!.!.pickled mango is da best! and i miss it sooooooooo MUCH! that reminds me pickled mango juice and vodka!.!.!.YUM! haha! we ran out of stuff to mix vodka with and we were eating pickled mango so i mixed it and loved it! li hing mui sprinkled on dried cranberries are delicious! li hing mui and lemon or oranges!. oooh, you can make prune mui!.

*if you don't have hawaiian salt you can use rock salt!.

that's all i can think of besides popcorn, gummy bears/worms!. oh, my cousin sprinkles powder on her apples!. another candy you can put it on is sour patch kids!. in hawaii they have hula keiki!. im actually eating some right now!.!.!.for real! the orange ones are the best in my opinion!.

You can use it around the rim of your favorite cocktail instead of salt!. Ling Hing Mui is great with a margarita!

Sprinkle on popcorn, gummy bears, mango!.!.oh speaking of mango!.!.pickled mango is the best!

Pickled Mango with Li Hing Mui

Ingredients:
1 gallon sliced green mangoes
2 cups raw sugar
1 cup rice vinegar 4 Tbsp Hawaiian rock salt
1/4 - 1/2 lb seedless li hing mui (15-25 or more)
1/4 tsp red food coloring (optional)
Cooking Instructions:
Peel green mango with a vegetable peeler!. Slice into thin strips and discard the seed!. Set aside!. Bring sugar, vinegar and salt to a boil!. Continue boiling until sugar dissolves!. Cool!. Stir in li hing mui slices and pour over mango slices!. Store in airtight container!.
Additional Comments:
Mangoes should be very small - 3 to 4 inches in diameter!. At this point you may cut through the seed!. Common mangoes will give the best results!. Regular vinegar will give it a more sour flavor!. Most people prefer the rice vinegar!.

Apricot Li Hing Upside-Down Cake

Ingredients:
1/4 C Li-hing juice
1/2 lb Dried apricots
1 Cake mix, such as Duncan Hines Moist Deluxe Yellow Cake
Nonstick cooking spray
1/4 lb Butter, melted
1-1/2 C packed light brown sugar
Li Hing Mui juice:
1/2 C warm water
4 Tbsp li-hing powder
Paper coffee filter
Strainer
Cooking Instructions:
Soak apricots in li-hing juice for 3 to 8 hours!. Prepare boxed cake mix, per instructions!. Lightly coat two 9-inch cake pans with spray!. In each pan, arrange half the apricots, cut side up!. Drizzle butter over apricots and sprinkle sugar over all!. Pour cake batter over all!. Tap pans on counter to release air bubbles; poke bubbles with toothpick!. Bake at 325 degrees for 20 to 25 minutes!. Cool in pan, on a rack for 10 minutes!. Invert cake onto a plate!.Www@FoodAQ@Com
