u wrap it with a flat thin dough then u dip it
in egg then u fry it thats why they call it a egg role
because traditionaly u dip the wrap and contents in

i actually wondered the same thing until i started making them myself!. my best guess is because there is eggs used in making the roll part and egg whites are used to seal the roll as well!.Www@FoodAQ@Com
