Buffet dinner-- What type of food?!


Question: Buffet dinner-- What type of food!?
I was thinking Spanish and Italian mix of food-- I'm not sure what to include!. We have decided on Pasta, chicken, and I'm sure about what else to add!. Any suggestions on must have menu items!.Www@FoodAQ@Com

I would just make it all Italian!.!.!.the flavors are more focused that way!. My buffet would include:

-A large bowl of penne pasta & a bowl of cheese tortellini
-3 differnent sauces (pesto, alfredo & marinara)
-Platters of grilled vegetables: asparagus, red onion slices, red/green bell peppers, roma tomatoes, roasted garlic cloves, slices of squash & mushrooms
-A platter of grilled chicken breast slices, slices of grilled Italian sausages
-A nice micro green saladWww@FoodAQ@Com

You need to pick foods that you can cook lots of easily!. Since its a buffet you want to have alot of food but you don't want to be slaving over it all day, plus you need to think of what foods can give you the most for your time the night before, things that can be cooked and reheated and what can be cooked that day or as the guest are coming in!. If your doing spanish I would include paella!. I think that would work great for a buffet, too!. also different types of tapas!. For Italian I think chicken parmigiana would be okay for a buffet!. But definitely pastas - tortellini, ravioli!.Www@FoodAQ@Com
