What the best way to season & cook Jamaican Oxtail?!


Question: What the best way to season & cook Jamaican Oxtail!?
I've looked at recipies for Jamaican Oxtail and they don't season it over night like how you'd season mutton but I've been told to do that!.!. also is it best to keep a bit of the fat on to flavour!.!. I suppose it's optional!.!. Jus that jamaicanrecipy!.com is good but anyone tell der way ca not everyone I know cooks it so need tips like wen to add gully (Butter) bean etc etcWww@FoodAQ@Com

I am a former chef and here in Canada I buy a prepared spice mix for oxtail made by Grace, but for your own blend use some salt, black pepper, garlic either fresh or a granule type, allspice, cumin, paprika, onion powder, thyme I used the Jamaican fresh type, I generally do this the night before and llow it to sit in the spice mix overnight!.

The the next day brown them off, add some onions, carrots and a bit of tomato paste, and some of the same seasoning used to season them first, stockor water and a cube or 2 of beef boullion, I do not use the browning sauce, but you can, we used to make our own in Jamaica!.

They set it to cook for 3-4 hours, I am not fond of the Butter beans, we used them in the hotel I worked at in Montego Bay, I like potatos or even yellow or ***** yam, even Jamaican sweet potatos, then in the end I add some callalo or kale for a green's element!.Www@FoodAQ@Com
