Fideo is also cooked w/ chicken or beef , it depends what you want to use!. You can make it alone and add side of re-fried beans with it also , taste really good with fresh made tortillas!. Any kind of meat would be good with it on the side in all honesty !. Its just the matter of you picking the meat you want !. Good luck!.Www@FoodAQ@Com
Well,
Better yet, you could make some fresh tortilla strips by stacking as many corn tortillas together, cut in half then cut strips as thick as you like!. Heat a skillet @ medium heat with about 1/2 cup of oil!. Once heated, place a few strips in the oil and stir it so they don't stick together!. **Make sure not to put too much tortilla strips @ one time**!. Remove after they turn a light brown color and drain them on a paper towel!. Place some of the strips in your hot fideo soup with maybe a squeeze of lemon!!!***WHoA***Watch out now!! LoL!! It's really good!! I eat it all the time!! Especially with the mexican chicken tortilla soup!.
If that is too much for you to do then just grab a bag of tortilla chips, warm them on a baking sheet in the oven set @ 350-deg!. Only for a few minutes!!! This will make them taste *FRESH & CRISPY* and not stale!! Then throw it into your soup as whole or crumble it up!. Per your liking!!
Enjoy!!Www@FoodAQ@Com

When I was a kid my mother used to accompany it with a beef or chicken dish (usually milanesa, sometimes chile colorado) and pinto beans (not refried)!. What you now call burritos we used to call tacos (I'm starting to show my age!.!.!.) and never had it with them, but it sounds really good!.
