Hi - when / how do you use *untoasted* sesame oil in Chinese cuisine!? I am accustomed to only the toasted oil!.
Thank you

Answers:
Use it the same way you would use a toasted sesame oil, it is just a milder flavour!. Just don't use it to fry or saute!.Www@FoodAQ@Com

You'd probably use it solely for frying!.

Toasted sesame oil has a lower smoke point than the untoasted version!. Both are used mainly for flavoring, and even when I use the toasted when frying or sauteeing, it's done as a small drizzle (or as part of my marinade) when there are other oils in the pan - solely for it's flavor!.

I know some Indian cuisines use untoasted sesame oil for frying - it's the only use I can think of, though I'd never consider using it as my "oil of choice", ever!.

Hope that helps! :)Www@FoodAQ@Com
