CHICKEN CURRY (INDIAN OR MALAY)

1 whole chicken (2 lbs!.)
2 med!. yellow onions, chopped
4 cloves garlic, minced
2" piece of ginger, minced
2 tomatoes, chopped
1 tsp!. yellow mustard seeds
1 tsp!. cumin seeds
1 tsp!. turmeric
3" stick cinnamon
2 c!. chicken stock
2 tbsp!. curry powder
1 tsp!. garum masala
1 c!. coconut milk (opt!.)

Cut the chicken into pieces and brown in oil!. Remove and add chopped onion!. Saute until tender!. Add garlic and ginger, make sure there is enough oil so that nothing sticks!. Add cumin and mustard seed!. Fry until the mustard seeds begin to "pop"!. Add the turmeric and curry powder and stir constantly to prevent any sticking!. Stir the "paste" until the curry powder becomes fragrant; this usually takes 1 to 2 minutes (be careful not to burn the curry powder)!. Add the chopped tomatoes and stir until they form a sauce (3-4 minutes)!. Add the chicken broth, cinnamon stick and chicken!. Cover and simmer until chicken is cooked (approximately 45 minutes)!. Stir in the garam masala and serve with white rice!.

If you want a smoother, Malay style curry, add the coconut milk with the chicken broth!.Www@FoodAQ@Com

1 Cup Taste of Thai Coconut Milk
2 Tbsp!. Curry Powder
Add minced garlic, white onions, paprika, cilantro, cumin, and any other spices you might like to taste!.

I like to add veggies as well like eggplant or peas or green beans or spinach!. Veggies/Onions/Spices etc!. I fry with the tofu below!. Curry powder and coconut milk I just mix together and add to the tofu/spices/veggies later!. I do get rid of the excess oil (don't pour down your drains) but leave a little to keep the curry moist!.

Eggplant seems to go well with red curry, eggplant with green curry, green beans with yellow curry but honestly, it just depends on your own likes and dislikes!. You can also purchase premade curry sauces!.

Combine with rice- I find Jasmine to be the tastiest with this dish!. When you make the rice, only use as much water as needed to be absorbed by the rice and some butter (or butter substitute as I use by Smart Balance)!.

also can combine with meat or tofu!. We fry tofu lightly in olive oil, canola oil, peanut, or sesame oil!.

The dish doesn't take long but be careful with frying/oils!. It's very tasty and inexpensive!. Enjoy!Www@FoodAQ@Com
