Question: Why would anybody pay good money for "Tamago" sushi, which is just seasoned egg!?!.!.!.!?

I never order tamago, but there is a reason for it being there!. The Japanese have super sensitive taste buds!. I mean, if the rice isn't grown in Japan, then it just isn't good enough for the Japanese!. They can easily taste the difference between rice grown in Japan and rice grown in California!. So when they cook their version of the omelet, it's a careful blend of flavors!. Try it the next time you're at the sushi bar and compare it to the last omelet you cooked at home!. You'll notice a sweetness/custard flavor that is quite pleasing!. Either that or you'll think that its just another egg and you wasted 6 bucks!.Www@FoodAQ@Com

A gourmet should be able to tell the differences! It depends what kind of ingredients - eggs the sushi restaurants use and how the chefs prepare the tamago sushi!

Good tamago sushi is prepared with organic free ranch eggs (preferable imported from Japan), freshly made on the day they serve you so that you can taste the natural aroma and sweetness of the fried eggs and the texture should be soft nearly like custard!. Some chefs mix a tiny bit fresh cream or sugar, rice wine and "dashi"stock when beating the eggs!.

It looks simple but actually it is worth to pay for well prepared yummy tamago sushi!.

I prepare the tamago myself and I know how to prepare it layer by layer (rolling it over on a rectangular pan)!. Different eggs taste different, I have tried eggs from England, Japan, US, Denmark, Australia, China!Www@FoodAQ@Com

it's bcos of the cooking process!. not what organic eggs or so!. japanese respect the way of cooking v much!. it's skillful to even cook the eggs!. traditionally they cook it in layers!. not just fried the eggs like us!. they cook it by each layer n finally comes the eggs 4 sushi!.Www@FoodAQ@Com

sushi isn't JUST raw fish, they use a variety of ingredients, including eggsWww@FoodAQ@Com

Some ppl don't eat raw eggs so they eat cooked eggs!. I like sushi too!.!.Www@FoodAQ@Com
