Since you asked under "ethnic cuisine", I'll venture Lassi!.!.!.no not the faithful colie but the wondrous beverage popular in parts of India!. I like it best made with rose water although blending in a ripe mango is a nice change!.
My basic recipe is simply 2 cups of yogurt, 1 teaspoon of rose water and a cup of broken ice cubes, all in a good blender, tight lid on, and high speed for about a minute (tell anyone with sound sensitivity to go away)!.
As I say, throw in a 1/2 cup of chopped mango for variety!. I have heard of benighted souls who also top this with whipped cream and toasted slivered almonds but feel they would be intentionally drowned in the Ganges if they tried to pull that sort of thing back where Lassi was invented!.Www@FoodAQ@Com

Try Zaziki as a dip - wonderful with baked potatoes!. It is Greek, also known in the turkish cuisine, though!.
Basically, it is just yogurt and cucumbers, but I am used to adding a lot of crushed garlic and some fresh herbs =)
Important ist, that you put the yogurt(yes, that may sound strange) into a dishtowel or cheesecloth and then knot the whole thing to your faucet and let the moisture drip out!. This will take a few hours!.
Meanwhile shred some cucumber - press out the excess moisture, otherwise you will thin the thickened yogurt out again!.
Then put the yogurt into a bowl, add the cucumber, crush or better press a garlic clove or two(or three or four) and fold in some herbs(chives are great), if you like you can also salt and pepper it or add a little splash of olive oil!.
As I said, this dip is great with baked potato but can also be used with fresh bread, as a topping for meatballs, fritters of all sorts or anything else that would go well with a very fresh, yogurty dip/spread!.Www@FoodAQ@Com

Simply mix in fresh fruits or jam or jelly of any sort and it is very good!. My favorite is blackberry jelly with fresh mangos!.Www@FoodAQ@Com
