It is alot like chinese food, whether it be the local style or the traditional style, I am a former chef and worked all over (Jamaica, Singapore and Japan), and I like both, but prefer the traditional, here in Toronto Canada you have both like the Chinese cuisines, some prefer the gloopy style for the Anglo palate, as to the more rustic and high intesity style of the homestyle traditional!.
I like tikka masala as much as a traditional butter chicken, saag dishes, dal, and paneer ones too, alot I think is up to you, are you more into the lighter anglo-sized fare or the hearty more flavourful traditional, again it is a matter of choice, but have ther merits!.Www@FoodAQ@Com
