Question: How do you cook a turtle!?
In the Chinese markets , they buy these baby turtles, that we buy in the pet stores for pets!.
They use the whole turtle!.
I have seen frozen turtles sold in Chinese markets!.
I hat the thought of cooking a turtle with its head and arms and legs!.Www@FoodAQ@Com

TURTLE ( ALONE)

1 cleaned & cut up turtle

Par boil until tender in a large container with onion and soda added to water!. Take meat off of bones!. Dip meat in beaten egg and flour!. Add seasoning!. Brown, put in oven at 350 degrees for 2 to 3 hours or until tender!. You may add sliced carrots and onions and bake with turtle!. You may also take meat off bone, put in shallow pan, add catsup and barbecue sauce and bake until tender!.

TURTLE ESTOGADO
2 lb!. turtle fillet
1 c!. potatoes, chopped
1 c!. carrots, chopped
1/2 c!. onions, chopped
1/2 c!. green peas
1/2 c!. green olives, sliced
1/4 c!. oil
1/2 c!. tomato sauce
1 c!. dry white wine
2 cans beer
2 tbsp!. lemon juice
1 clove garlic, minced
Salt & pepper
2 jalapenos, sliced for garnish

Beat fillets lightly to tenderness and grill to medium!. Cut fillets in julienne strips!. Sprinkle with lemon juice, garlic, salt and pepper!. Place in casserole dish!. Saute all vegetables in oil!. Beat fillets lightly to tenderize and grill to medium!. Cut fillets in julienne strips!. Sprinkle with lemon juice, garlic, salt and pepper!. Place in casserole dish!. Saute of vegetables in oil and add to turtle!. Mix tomato sauce, wine and beer!. Pour over casserole and bake covered for 45 minutes to 1 hour!. At serving, garnish with jalapenos!. Pork ribs, chicken or venison may be substituted for turtle!.

TURTLE AND FROG LEGS
Frog legs
Turtle
Buttermilk
Flour
Vegetable oil for frying

Prepare frog legs and turtle!. Soak overnight in refrigerator in buttermilk!. Allow to stand 2 hours at room temperature!. Dredge in flour and fry in oil as you would chicken!. Heating the buttermilk improves the flavor of turtle and frog legs!.Www@FoodAQ@Com
