Question: Kimchee: What temperature should it be kept at for fermenting!?
I live in the desert so it gets fairly Hot!. No I am not going to bury it in the yard!Www@FoodAQ@Com

After it's made, leave it unrefrigerated for about a day and a half, then refrigerate it for about a week (it may be eaten during that time, but tastes "full throttle" after about 2 weeks) and then enjoy, BE SURE TO OPEN IT CAREFULLY, OVER THE SINK, AS THE FERMENTATION PROCESS CAN REALLY CREATE SOME PRESSURE IN THE JAR!.!.!.!.!.!.OPEN IT SLOWLY AND LET ANY PRESSURE (FERMENTATION GASSES) EXPELL PRIOR TO OPENING THE LID ALL THE WAY!.!.!.!.!.Enjoy!!!!
