The best part about Italian food is the experimentation!. For example, I recently made a pan-seared chicken dish with diced tomatoes, rosemary, garlic, oregano, all mixed with al dente farfalle noodles!. It was fantastic!.
Of the more traditional Italian foods, I LOVE real Italian pizza, lasagna, and spaghetti!. I sometimes get on a fettuccine alfredo kick, maybe with some chicken, some broccoli, and bell peppers!.

I enjoy Linguine Marinara with either clam sauce or tossed with olive oil, olives, sea food, and Parmesan-Reggiano cheese, sautéd garlic, and parsley!.
I also liked a veal dish I had that was like a roulade, but I didn't know the name of it!.
It was a thinly sliced veal chop, rolled around a cheese and mushroom mixture and then braised in a butter sauce!. It was artery hardening, but so very very profanely good!! As were the stuffed pasta shells with white sauce I had that were Northern Italian!. Benissimo!Www@FoodAQ@Com

I'm not Italian, but it is an internationally acknowledged cuisine, so lots of people (not just Italians) cook italian food at home!.
I like to cook Osso Bucco with Gremolata, Stracotto al Chianti, Panzella, il salata di faccioli con tonno (I have no idea if I'm spelling them correctly, by the way ) and pastitsio!.
I also like lasagna, but I prefer to eat it outside!.Www@FoodAQ@Com

I'm Italian born but living in Canada from the time I was a little child and I love Italian Food!. My mother was a very good cook and I learned cooking from my mother and later from my mother-in-law, and Godmother!. I love to cook,and have been cooking all my life!. Cooking is my passion!. Lasagna is one of my favorites and I also love Lasagna Verde made with Spinach Pasta!. I first had Lasagaa Verde in Florence when I was on my Honeymoon as it is a specialty of Northern Italy!. Coming from the South of Italy it was new for me, and I fell in love with it and learned to make it and I make it often!. I make 4 different kinds of Lasagna, but my favorite is the one that my mother taught me from my home-town!.

In the summer time I love cooking with the many and varied vegetables!.!. I love making battered-fried vegetables!.!.every Italian household has a recipe or two for such tasty treats!. I love battered Pumpkin Blossoms, such a treat, and zucchini fritters, tiella di Zucchini e Patate, Patate in Tiella con Salccica, Patate Fritte con Peparoni, Salccica con Rapini, Peperonata, Funghi Ripieni, Piseli e Pasta, Fave, Carciofini, Cavolo Stufato, Fagiolini Verde in Succo and In Salata, Fagiolini Secci in Forno con Succo e Carne di Maille!.
And a good Frittate anytime, but in the summer so delicious with the many and varied vegetables!.!.with onions, zucchini, mushrooms, Cavollo and Broccoli and the varied cheeses and salami!.!.a good Frittate is the ultimate olmette!.
For Dessert I love making my Italian Sponge Cake, the Ultimate with Fresh Fruit any time of the year!. Italian Almond Cookies, Christmas Honey Cookies, amaretti, Christmas Turnovers, Italian Trifle, Torta di Mele, tarralli, freze, Potato Donuts, Cenci, Canoli, Tiramisu and Spoliatelle!.
The list goes on and on!. And of course let me not forget all the home-style foods I love to perserve, like our home-made and jarred peeled tomatoes and puree for our tomatoe sauce, giardieri, olives, pickled melanzane, peppers and mushrooms, and of course preserved Roasted Peppers!.
I love to make my own home-made pasta and gnocchi!.
I bought my first pasta machine when I was on my honeymoon in Italy 38 years ago!.!. Still using it!.!. I was 20 years old when I married my husband and I learned to make pasta after I married!.!.
Shortly after I married, I cooked for a crowd of 14 people visiting from Italy!. I cooked home-made Ravioli ( Pasta and filling all from Scratch) Stuffed Braccioli, Artichokes and Roasted Potatoes alla Italiana!. Everyone that evening said I made the best Ravioli they ever had tasted!.
To finish off any meal a good expresso with quality coffee beans, and in the summer time Iced Cappucino!.!.

The List of Italian dishes is endless as each little town has its own specialites but most of the well-known home recipes are timeless and each household has it own version!. But all so good!.
