Bon Jour, I am a former chef from Canada and worked in the Caribbean, it is not the fact you will not be able to produce these recipes for your class work, but will you be able to find the cooking ingredients, like Jamaican cuisine Haitian is very specialize, with the French, Creole, Spanish and African influences!.
You best bet is a chicken stew made like U!.S creole chicken with an addition of some spinach, a bit spicey and served with rice, I know of several websites to look up, but it may be hard to find alot of Haitian food ingredients if there is no Haitian community in your city!.Www@FoodAQ@Com
