I need some help and suggestions about East Indian cooking please?!
My hubbies office is having an East Indian man come for 2 days!. He is Hindu I believe and a vegetarian!. I want to present some food for him to lunch on because there is no where in Montana that you can get East Indian food!. I have a cook book with some recipes but it is hard to translate their name for things like lentils and ours!. I need also know if you can substitute something else for things like: asafetida and anardona (dried pomegranate seeds)!. One last question, would it be insulting to a man from the Mumbai area to be served Northern Indian food or does it matter!? ThanksWww@FoodAQ@Com

I don't think a man from Mumbai will have a problem with North Indian food!.
There is no substitute for asafoetida that I know of!. It has a very bitter taste, and you only use just a pinch of it in a dish!. It definitely adds more flavor to the dish, but if you don't have it, don't worry about it!.
Just try your best!. I'm sure he will appreciate your consideration!.Www@FoodAQ@Com

It will probably be more appreciated that you cook him food that fits with his vegetarian preferences than that you cook food that is authentically Indian or East Indian!.Www@FoodAQ@Com
A man from mumbai area will be very comfortable with Northern Indian food, as they are basically roti (wheat flat bread) eating type!.Www@FoodAQ@Com
