First off, I'd like to point out that Chinese food is Chinese food, be they in San Francisco, Singapore or Sydney - of course they vary, they must, to cater to local tastes!.
The Cantonese dishes in Guangzhou (Canton Province) China, even differs (a lot) from the neighbouring Cantonese-speaking Hong Kong!. My point is: don't keep on knocking so-called "American-Chinese" food - they are as good as they come!. The culture of the cuisine is Chinese!.
Americans may be disappointed in the food served in China; I know many Asians including overseas-born Chinese who prefer their adopted country's Chinese food (egs!. Singapore, Malaysia) to those served in China!. Because the food is more hygienic, better quality, healthier (less oily, less salty) and more to their tastes - higher standard of living!. Likewise, Chinese nationals - students and workers - when eating Chinese food served in Singapore, Kuala Lumpur, prefer their home country's food (in China)!.
I've feasted on a wide variety of Chinese regional cuisine but find myself coming back to Cantonese style!. One typical tasty meal I like includes: Yang Chow Fried Rice, Fried XO Prawns with Asparagus, Sliced Beef wth Ginger-Onion and a Herbal Soup (Double-boil Ginseng Black Chicken)!.

YOU mean Americanized Chinese food!? Because all of that garbage that is deep fried, and covered in slimy oily sauces and filled with fat calories and sugar is NOT native cuisine of China! In China you are apt to get very little other than some vegtables, rice and tea!.
