These don't have lettuce, but are really good!. I got the recipe from a cooking school I went to when I lived in Phuket!. There a little tricky to wrap at first, but they'll get prettier as you go!
Dipping sauce:
1/2 cup hoisin saice
1 1/2 teaspoons creamy peanut butter
1 1/2 teaspoons water
bring to boil in a small saucepan, take off heat right away and set aside
Rolls:
6 round (or square) rice paper sheets
1/4 lb!. medium shrimp
1/4 pound ground pork
4 oz!. package very thin rice noodles
1/2 bunch fresh thai basil (asian stores) leaves picked from stems
1/2 cup chopped cilantro
1/2 cup chopped fresh mint
1 cup bean sprouts
-Boil shrimp 2 or 3 minutes until done, shell, and dry with paper towels, cut in half!.
-cook pork until done in a small skillet, breaking it up into small crumbles!.
-Put noodles in a pot of boiling water 7-8 minutes until done!. Drain and rinse with cold water to prevent sticking!.
-Fill a medium bowl with warm water!. Dip a wrapper for about 30 seconds!. Lay it flat on a cutting board!. in the center place 2 basil leaves end to end!.
-lay 4 or 5 shrimp halves on top of basil
-then a small amount of pork, small amount of noodles
-sprinkle with mint and cilantro!.
-top with bean sprouts
-start at one end, roll the wrapper over once, fold both sides in to the center continue to roll as tight as possible without tearing!.
Place on a plate (on individual lettuce leaves if you want), seam side down and serve with peanut sauce!.
They may not be the same as the ones you wanted, but are pretty authentic!. I hope you enjoy, and don't be discouraged if they are funny looking at first, mine sure were!. But so yummy!.!.!.Www@FoodAQ@Com
