How should I cook this somen?!
ingredients available: mirin, kikkoman shoyu!.!.!. I think most recipes use spring onions but i don't have any in the fridge!. I do have some miso paste though!.!.!. Please help me!.!. I'm craving for noodles tonight!.!.!. hot spicy noodles!.!.Www@FoodAQ@Com

I love somen noodles, I am asian and my family makes delicious somen noodles all the time!

Heres how my family makes it :
===Ingredients===
4 bundles somen (thin wheat noodles)
Small fresh ginger root
One bunch scallions ( If you have! )
===Sauce===
3!.5 ounces mirin
3!.5 ounces soy sauce
14 ounces dashi stock
===Directions===
Heat the mirin in a sauce pan, bring to a boil and add the soy sauce and dashi; bring to a second boil!. Remove from the heat and allow to cool!. This creates a tsuyu, or dipping sauce, in the Kanto style (the area of Eastern Japan around Tokyo)!.
Peel and grate enough ginger and finely chop enough scallions to garnish the noodles!. Whether you like a heavy or light garnish is a matter of personal taste!.
Cook the noodles in plenty of boiling water!. Once cooked, rinse thoroughly in cold water!.
Place some iced water (with chopped ice) in a serving dish, then arrange the noodles on top, garnishing with the shredded ginger and chopped scallions!. Serve in individual bowls!.

just boil the somen until it is al dente - as they say!. just mix some shoyu with some mirin - or buy bottled somen sauce - it's decent!. chop up some green onions, use wasabi paste - and you will have your spicy someni! i like tofu cubes on mine!.Www@FoodAQ@Com
