Chinese Chicken?!
I want to know how to get the breading that is on most Chinese chicken dishes!. Like sweet & sour chicken style!. the crisp, yet soft breading!.Www@FoodAQ@Com

we marinate the chicken pieces with soy sauces, sugar, rice wine and beaten egg white for about 15 minutes then coat the meat with corn flour and deep fry it till golden!. Stir fry the deep fried chicken with other ingredients and sauces!.Www@FoodAQ@Com
They use corn starch and deep fry it in hot oil!.
