In Hawaii we dip the sashimi (it's a grade of fish, we use ahi, aka yellow-fin tuna, as we prefer the flavor) in a shoyu and cider vinegar mix (the vinegar "cooks" the fish) or just eat it plain!. Some eat it with just plain shoyu as the dipping sauce, or even shoyu, vinegar and chili pepper water (Hawaiian chili peppers) or tobasco for a little kick!.
Sushi is not raw fish - but it can contain raw fish depending on the type of sushi you eat!. Sushi is flavored rice usually wrapped in nori (seaweed) and has vegetables (cucumber is a popular one) or egg or even tuna (like the canned kind) or crab!. But there are so many styles of sushi - maki roll or inari - that you simply cannot generalize it!.
I've had ceviche, and I have had raw fish!. I've also had the Guam dish called kelaguin (sp!?) which is thin strips of flank steak soaked in a citrus sauce - the citrus cooks the meat - with Guam red peppers for spice!. It's an acquired taste, to be sure, but worth trying at least once!.

The most important thing to remember is that Sashimi is RAW!. You can not simply slice and eat any type of raw fish that is sold in stores!. ULTS frozen fish is the best and safest for Sashimi!.

Sashimi is sushi grade raw fish!. Ceviche is raw seafood that's marinaded in lemon/lime juice!. The citrus juice actually cooks the raw seafood!. Therefore, the difference between sashimi and ceviche is that sashimi is just raw fish with nothing added!.Www@FoodAQ@Com

Sashimi is basically sushi fish but without the rice!. It tastes really good with soy sauce and wasabi (which is like horseradish) and some pickled ginger!.Www@FoodAQ@Com
