I am a former chef from Canada and can safely say I have had all those mentioned plus a few others, the frog skin chips with fermented fish dipping sauce in Thailand, the mealworm tacos in Mexico, Yak cheese in Singapore, whale blubber in Canada, fermented soya beans in Japan, Gooey Duk (large clam like by-valve) in Vancouver B!.C Canada!.

I have never tried it but I would say balut is the oddest, it's a partially mature duck embryo and a delicacy in the FarEast:

What I had wasn't really "ethnic", but I guess you can call it more of a Southern thing!. I was a kid, and of course I usually ate what was given to me!.!.!.!. MUSKRAT!!!!!! I'd never eat it today, but had that as a young child!.Www@FoodAQ@Com
