You can get both enchiladas and coconut flan at a restaurant called Rancho del Zocalo, which is located in Frontierland!. A lot of people don't pay attention to this place, but it has great Mexican Food and is rarely ever crowded!. I would avoid it at night though (the only time it does get crowded) because you can see Fantasmic from there, a show that is a must see, especially if you have kids!.
