Chinese Cooking Question?!
There is a dish that I adore in my local `quality` Chinese Restaurant, Mussels in chilli & Garlic sauce!. I have had a couple of attempts at the sauce which is basically Chilli's & Garlic chopped very small in a `liquid` which is then heated and poured over the mussells!. However I don't know what this lquid is, I don't think its Soy Sauce, its the basis of a lot of Chinese sauces, tasty but not tangy or spicy, slightly brown in colour!.!.!. Any idea's!?Www@FoodAQ@Com
Answers:
Mix corn flour with water and oyster sauce to taste!. If the sauce turns out a little too thick, add more water, a little at a time, to thin it down until it's right!.
Add a teaspoonful of sugar to balance out if you find it too salty!.
Finally, a few drops of sesame oil and pepper will enhance the flavour as well!.Www@FoodAQ@Com

you must give us the name of this dish!. so we can know what is this!? i think it may be have cooking wine ,sugar,soy sauce,and a little rice flour farina with water!.
If you want to cook this sea food, first you must clean it ,cut the chill and garlic very small ,then put some oil in pan!.
secondly, put the chill and garlic in the pan !. 5 or 6 sec put the mussels in ,the take some cooking wine,soy sauce,and 2 or 3 spoons sugar!. if you like you can put some rice flour farina with water the put in pan!. cook 4 or 5 Min's!. or you only put some water in it!. Many times they use a chicken broth and make a loose gravy out of it with corn starch! Pour the broth in a pan and bring to a boil and take the corn starch, about a table spoon and add cold water in a cup until just runny and pour into boiling broth and stir until just thick! Check for flavor and sometimes I use chicken or beef bouillon cubes to enhance the flavor! Later!Www@FoodAQ@Com

Chili garlic sauce can be bought in large grocery stores or Asian markets!. It's probably thinned with a bit of stock!. It's really yummy and not too expensive, depending on the brand!.Www@FoodAQ@Com
