What does Curry or Kari means for us Indians!. In India, Curry is the name given to a dish that is made out of a few ingredients!. So you can have Chicken Curry, Egg Curry or Beans Curry!. "Curry powder" thus means powdered spices used for prepaing a "curry" and it can range from mild to hot!.

Re!. your question, yes Rice and Curry is definitely good and healthy too!. Now a Curry can be bland (and include some spices like turmeric, cumin, corriander, cloves) or it can be spicy (meaning adding green chillis, cayenne or hot pepper to the other spices)!. When an Indian says spicy, it means hot! And a curry can have some gravy or it can be dry!.

For a bland and "authentic" Kerala style Beans Curry or "Thoran", keep aside two handfuls (say 2 cups) of freshly chopped green beans!. In a wok add a couple of spoons of olive or other oil, when the oil is heated (not smoking), add a tsp!. of black mustard seeds and 1 tsp of split Urad Dal or skinned and split black lentil (you can get these at an Indian or Asian grocery store), as soon as the mustard splutters, add a sliced green chilli or jalopeno (de-seed if you are not sure), add the chopped beans, a hint of turmeric (if you have it), a pinch of salt (to taste)!. Under a low flame, mix everything, you may cover the pan and let it cook for about 5 minutes!. The beans should be a bit tender, but the water from the beans will have come out!. Remove the lid and cook for a few minutes more to let the water evaporate!.!. just move the veggies around the side so that the water is in the centre of the pan!. If you like it crunchy, you can cook it for less time!. If you have fresh grated coconut, sprinkle a tbsp of it, mix well and cook for 1 minute!. [Indian stores carry fresh grated coconut that you can use as needed and refreeze!.] Take off the flame and serve with hot rice!.

Substitutions: You may substitute this recipe with chopped cabbage or even use a mixture of frozen cubed carrots and frozen peas!.Www@FoodAQ@Com

Rice and Curry is a really good Indian food loved by all!.Curry actually is not the one used in making cottagcheese curry, and so many other curries!.It is not of that red or green colored one!.
Curry is made of Curd!.Its a very simple recipe!.

Curd blended with water in ratio 3 cups curd is to half cup water!.
Edible oil ( any groundnut, mustard, soyabean but not olive)
cumin seeds 1 tablespoon
Turmeric powder 1 teaspoon
Salt
METHOD
in a pan heat oil!.Add cumin seeds to it!.as they start making sound add curry leaves if available!.then add turmeric powder and as soon as u add turmeric add the blended curd to the pan!.Add salt to taste!.Give a boil and close the lid of burner!.
Serve it hot with hot Rice!.
You can also serve uncooked onions chopped or cut in circles!.Its a good combination!.

Curry with coconut milk is Thai--well most anyway--and delicious too, but a completely different spice combo!. Here is my favorite homemade curry powder!. I like to spread it around!.

Makes 1 cup

1/2 cup coriander seeds

15 dry red chili pods (I usually use 8)

1 1/2 teaspoons cumin seeds

1 1/2 teaspoons mustard seeds

1 1 /2 teaspoons fenugreek seeds

1 1/12 teaspoons black peppercorns

15-20 curry leaves, dried or fresh

3 Tablespoons ground turmeric


If using fresh curry leaves dry them briefly in a frying pan over low heat, 4-5 minutes!. The recipe says the leaves are optional, but I've never made it without them!.


Mix the ingredients except turmeric and grind in a spice or coffee grinder in smallish batches!. Put in a bowl and mix in the turmeric!. Transfer to an airtight jar and use within 3 months or keep in the fridge and don't worry about how old it is!.


Chili pods can be omitted if you don't like heat!.

Curry is a spice, there are 3 kinds: Red, yellow, and green!. Red is spicy, yellow is usually mixed with coconut milk (sweet and yum!) and I think green is spicy too!. Curry is a mix of spices and it is yellow because of the tumeric in it!.!.!. Tumeric has a lot of scientific backing showing that it is VERY VERY VERY good for you and can help with inflamation of the joints and something about the heart!.

You can either buy a pre-mixed curry powder at any grocery store or you can research the various types of curry powder and make your own spice blend from the whole spices!.!.!. Which will ALWAYS taste better then the stuff from the jar!.

I put curry powder in almost everything!.!.!.

My personal fave is to take a can of cream of mushroom soup, a small can of mushrooms, (Drained) a can of tuna, (Drained) some garlic to taste, and if you want, a bit of chopped onion!. Add curry powder to taste!. (I like lots so I don't know what amount to tell you!.!.!.) Water down the sauce until it is what you like then spoon over rice or noodles!.
