Recipe for guinea Pig soup?!


Question: Recipe for guinea Pig soup!?
I'm looking for an english recipe for Sopa de Cuy ("soup of guinea pig)!.

Does anyone have any good recipes for Sopa de Cuy!?

Using google's translator does most of the work, but I can't figure out what "écheles", and "fríalos" are!.

Translated version:

Ingredients:
* 4 guinea pigs (at least 2 kilos)
* 1 cup oil
* 12 cups water
* 1/2 cup rice
* 2 grated carrots
* 4 sliced potatoes
* 4 boiled eggs
* 2 tablespoons oregano
* Salt

Instructions:

Cut the guinea pigs removing the heads and feet, into eight pieces!.

écheles salt and fríalos for about five minutes in hot oil!.

Drain fat and echela!. Boil in water, along with the rice, carrots and potatoes, until they are completely cooked!.

Season with oregano and salt!.

I just saw Andrew Zimmerman in Ecuador on this!. ( It actually looked YUMMY!)!. If you cannot find it by looking up Andrew Zimmerman, than look up Ecuadorain cuisine!. It is a traditional delicacy for over hundreds of years!. (Spit roated looks good!)
As far as the recipe goes: Echales, means put them with salt and (frialos) fry them for about five minutes in hot oil!.Like when it says drain fat and echala!. It means take them out of the fat!.

( By the way, according to Andrew Zimmerman, in Ecuador, the meat is very sweet and tender and very yummy when the skin is crispy)

Guinea pig is a delicacy in many countries!. Especially those whom have very little grass for livestock to feed from!. I do not speak Spanish but I think that what you have to do is to season the guinea pig fry it off with some onions then drain the fat add the water or possibly chicken stock would be a good alternative for extra flavour!.Www@FoodAQ@Com
