Answers:
It probably means you shouldn't eat it and it is some sort of damage or mold of some kind!. I have not known the american version to get anything white or blobby on it even when left in the sun unless it was some sort of mold or mold like substance
As for true Sriracha sauce it would need to be refrigerated but the stuff from Huy Fong Foods (with the rooster) is not the real thing but an american version that doesn't need to be refrigerated!. The real stuff actually refers to a sauce made in a sea-village in Thailand called Si Racha/Sri Racha and I guess now just generic hot sauce in Thailand!.Www@FoodAQ@Com

Not good!. It should not have any "blobby" things in it!. Sun damage wouldn't cause this!. It would just alter the color!.

Sriracha sauce does need to be refrigerated after opening!. This restaurant might not be doing that and might be keeping the same big bottle around for weeks, unrefrigerated, in the sun! I wouldn't eat it, and I would think twice about eating at the restaurant at all!.Www@FoodAQ@Com
