Eskimo pies are a very special pie, they require a minimum of 26 hours in a cold oven, you have to prechill the oven to 28 degrees F!. Put the raw pie into the prechilled oven and bake for 26 to 38 hours and I always use the open weave in restaurants where I have worked!.Www@FoodAQ@Com

I prefer my Eskimo Pie as is please, very tasty that way <G>
Now a baked Alaska is a different kettle of fish and you bake it
not long at all just enough to brown the meringue!.
