Indian Samosa

? 1 Cup all purpose flour
? 2 tsp Butter
? 1/2 Cup chopped onions
? 1 Cup boiled, peeled and chopped potatoes
? 1/2 Cup peas
? 1 Green chilli
? 1/2 tsp Ginger
? 1/4 Cup chopped cilantro leaves
? 1/2 tsp Red chilli powder
? 1/4 tsp Baking soda
? Salt to taste
? Oil for deep frying


How to make Samosa:
? Boil, peel and chop the potatoes!.
? Make a liquid of water and all purpose flour in a bowl!.
? Take two tablespoons of oil in a pan and heat it!.
? Add onions and chopped green chilli to it!.
? Add peas to it after frying for two minutes!.
? Cook for 3-4 minutes and add ground ginger, salt, red chilli powder and chopped potatoes at last!.
? Mix above ingredients well after turning off the heat!.
? Mix up all purpose flour, salt, baking soda and butter and make strong dough!.
? Make small balls of the dough and roll into thin circles of 5-6 inches!.
? Cut into half with the help of knife!.
? Smear liquid of all purpose flour and water on the sides and shape into cones!.
? Fill the cooked potato mix in the cones and close the sides!.
? Now heat the oil in a frying pan and when it is hot enough, put the samosas in it!.
? Fry them on medium heat till they turn golden brown!.
? Samosas are ready!.

Ok this recipe uses ready made ingrediants rather than making the dough for the samosas!.!.!.
one package of filo dough (can be found in the freezer area)
2 cooked, cubed potatoes,preferably Idaho
frozen peas and carrots,thawed
chopped small onion
1 bunch of corriander/cilantro, chopped
salt& pepper
Mix the last five ingrediants together in a large bowl!. Set aside!. Thaw the filo dough!. Once thawed, take one sheet and brush melted butter all over it,top with another sheet, and repeat butter action!. Cover the remaining sheets with a moist towel!. Cut the two sheet stack in fourths, lengthwise!. At the top of the first strip, place a spoonful of the potato filling not at the edge!. Take the top left corner of the filo and fold downward to the right side,creating a triangle to cover the filling!. Take the right corner and fold down!. Now repeat this starting with the right corner this time!. repeat this process with all the strips of filo until you have the familiar triangle shape, sealing the ends with a light egg wash(one egg& 2 Tbls!. of water) on the ends!. From here you can bake or fry the parcels!. A nice way to serve these is with coriander relish which you can find in your local Indian grocery store!.Www@FoodAQ@Com

With All purpose flour (maida), salt and veg!. ghee or oil(your choice) and a pinch of bicarbonate soda and water make a dough and keep it aside in a closed container!. Cook potato!. Peel off skins, mash and mix along with salt, onion and green chilli!. With the dough spreading with a rolling pin, make a round shaped disc, cut into two pieces and keep a spoonful of the potato mix in the center of one half circle and fold it so that it becomes a triangle or cone without any holes in any of the sides!. You can use water to stick it in open place!. Make like this for all the mix and dough!. Then deep fry in oil and serve along with tomato ketchup!.Www@FoodAQ@Com
