Arroz Brasileiro (Brazilian Rice)
SERVES 6

1/4 cup olive oil
2 onions, finely chopped
1 1/2 cups rice
3 cups hot chicken broth (to make this vegetarian or vegan I use 3 cups hot water and 3 full teaspoons of Mckays Chicken seaso)
10 ounces Italian plum tomatoes, canned drained and chopped
salt, to taste
cilantro, to garnish
tomatoes, wedges to garnish

Heat oil in a saucepan over medium heat!. Add onions and saute until transparent!.
Add rice and cook, stirring constantly, until grains are coated with oil and rice is hot (about 3 minutes)!.
Add broth, tomatoes, and salt, and bring to a boil!.
Reduce heat to very low!. Cover and cook until done, about 20 minutes!.
Garnish with cilantro and tomatoes!.Www@FoodAQ@Com

I follow basically the same recipe as the above one, but I add cold water first and cover (just to cover, don't put too much water), lower the flame!. When the water goes down and you see like little "holes" on the surface (caused by the water that went down), add warm or hot water to cover again (not way too much), leave the flame low, or even lower, and cover it!. Keep an eye on it (it takes 5 min or more for the water to go down again, it depends on how much rice you're making)!. When you see the "holes" on the surface again, get a wooden spoon on the sides, and without messing up the whole rice (without stirring) see if the water dried on the bottom of the pan!. If it did, turn off the flame and leave it covered!.
When serving, take the rice from the pan from the surface (like you're "combing" the surface with the wooden spoon and then get the rice that is loose), and not in "blocks"!.

Besides putting onions, I also put like one (or two, depending on the quantitiy) cloves of chopped garlic with the onion in the oil!.
After putting the first water (the cold one that helps the rice get more "loose"), I sometimes also put one or two bay leaves!. That adds a lot of flavor to it!.

Now if you want just plain rice, don't add any tomatoes, or cilantro (as far as I know, Brazilians don't add cilantro to rice, but it's up to you if you want to try)!. And I also don't add chicken broth if I want the plain rice recipe, but again, it's up to you if you want to try it!.Www@FoodAQ@Com
