Indian cooks: my Matar Paneer needs more flavor...?!
Below is recipe am following!.
The serrano chillies make it spicy-hot enough for my taste, but overall it lacks some flavor!.
Suggestions!?

1/2 cup diced white onion
3 tbsp cooking oil
2 tbsp tomato paste
4 clove garlic
2 green serrano chillies
2 tsp coriander powder
1 tsp tumeric (haldi)
1 tsp cumin (jeera)
1 tsp red chilli powder
1 tsp ginger

For me and I am a former chef, "more" 2-3 onions, and brown them until soft, ginger garlic and spices, add the tomato paste, the first lady has a point, a bit garam masala, cook the spices and other ingredients until it becomes fragrant and darken but not burnt, add the frozen peas and a bit of stock, bring this to the simmer, cover and let the sauce set up (15-20 minutes), while it is simmering, brown the paneer in a non stick pan with a touch of oil so to crisp up the outer portions, once that has been done add it to the mattar mix and simmer for 10 minutes more, a dash of salt and sugar to taste and fresh cilantro to finishWww@FoodAQ@Com
Where's the garam masala!? Add 1 tsp of gm and 2 tsp ground cumin powder!. Then try it and see if that is what was missing!
also, add 1 good size large onion!. Let your onion, ginger & garlic really fry before adding the spices!. Make sure your spices are fresh and toasted!. Let them cook for 3-4 minutes after adding until they are really fragrant!. Enjoy!Www@FoodAQ@Com

first want to start off by saying i had matar paneer yesterday night! okay sorry i would try some more garam masala maybe more garlic try putting some packetted masalas umm more chili powder to make it spicy as per ur spice level um try some more salt! or haldi try a lil cinnaniminWww@FoodAQ@Com
