Question: North African spice mixtures!?
What are some spice mixtures that are used in North African cuisine!? Morocco in particular!. I'm familiar with some of the common spices, but can't seem to get my mixtures spicy enough (as in hot)!.Www@FoodAQ@Com

Ras El Hanout (Moroccan spice mixture)

This is a traditional spice mixture that is used in everyday Moroccan cooking!.

1 tablespoon coriander seeds, ground
1 tablespoon cumin
1 tablespoon ginger, ground
1 tablespoon pepper
1/2 teaspoon mace
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/2 teaspoon cardamom
1/2 teaspoon turmeric
1/2 teaspoon cinnamon
1/4 teaspoon cloves, ground
1/4 teaspoon cayenne

Combine all ingredients!. Store in a tightly covered container!. Makes about 1/3 cup spice mixture, or a little more than 5 servings of 1 tablespoon each!.Www@FoodAQ@Com
