Hiya, I am a vegetarian & absolutely love to cook!.!.!. I usually have on hand fresh veggies such as portobella 'shrooms, onion, broccoli & tomatoes!. I heat a little olive oil while I prep the veggies (cutting, cubing, slicing, dicing, whatever) in various sizes!. Adding onions first to the hot oil, saute until onion just starts to become a bit translucent, then add the 'shrooms & broccoli!. Saute for a minute, add the tomatoes, singeing them lightly, cover & remove from heat!. You can add fresh herbs such as basil, cilantro, etc!. at the end & let the flavors 'marry' in the covered pot!.
Sometimes I use canned tomatoes & make a sauce with the ensuing liquid by adding a touch of peanut butter & cayenne pepper (this, to me, is nirvana with rice & beans)!. You can also try experimenting with various curries!. A bit of honey drizzled over the whole dish just before serving is a surprising touch!. You can add sesame seeds, peanuts or other nuts during the final cooking stage, or raw!. I purposely left my recipe ideas open for you just to gather some insight!.!.!. now, go play with your food! BROWN RICE AND BLACK BEANS MARDI
2 1/4 c!. instant brown rice
1 3/4 c!. boiling water
2 (15 oz!.) cans cooked black beans or pinto beans, do not drain
2 tbsp!. butter
1 lg!. onion, chopped
3 lg!. cloves garlic, chopped
1 med!. green pepper, chopped
1/2 tsp!. ground cumin
1 1/2 c!. salsa
Cook rice as per instructions on the box and set aside!. In a large frying pan, saute' onion, garlic and green pepper in butter!. Add rice, beans, cumin and salsa and simmer about 20 minutes!.
This can be served hot as a side dish or cold as a Rice Salad on Bibb Lettuce!.Www@FoodAQ@Com

i don't know your amount that your making, but to your taste if you have a spanish store near you buy some adobo, cumin, sazon, sofrito, recaito, for enough for 4 peeps, you would use 1 pack of the sazon 1 tbsp, of both sofrito and recaito!., 1tsp of cumin, adobo, garlic pwdr, salt and pepper!.!.!. for indian rice use 2tsp of tumerick, 2 tsp of curry pwdr, garlic pwdr salt and pepper, just put these ingredients into the water with your rice!.Www@FoodAQ@Com
