Camote
Ingredients:
4 large sweet potatoes
1/2 cup honey
1/2 cup butter
1-2 dashes cinnamon (optional)
Preparation:
Peel sweet potatoes and cut them into approx!. 1 inch cubes!. Place them in a buttered oven-safe dish, cover and bake for 45 minutes at 375 degrees!. Then remove and top with the remaining butter, honey and cinnamon!. Bake uncovered for an additional 10-15 minutes!.

Chilied Corn
Ingredients:
16 oz bag of frozen corn -or- 2 cans, drained
1 small can of roasted red chiles, finely diced
1/4 teaspoon cumin
1 teaspoon chile powder
1 teaspoon serrano chile, finely diced
1 tablespoon oil
salt to taste
Preparation:
Heat oil in a large saucepan over medium heat!. Add in corn and let it heat for 5-10 minutes!. Sprinkle in seasonings and chiles and cook for an additional 5 minutes!. Salt to taste!.Www@FoodAQ@Com

burretos are easy or u could always make a mexican wrap use mince or chicken and cook it in a mexican sauce u can also buy burreto and taco kits and whatever else u want to add to it there simple to make and its a meal in itself or cook ur mince add diced onions add ur taco sauce when done dish it out sprinke grated cheese over it then melt it in the microwave add a blob of sour cream in the middle and put nacho chips around the edges of ur plate its a meal where u dont have to have anything on the side its fulling it tastes good and it only takes about 20 minits to makeWww@FoodAQ@Com

1 pkg frozen or canned corn cooked and drained!. In med!. sauce pan combined corn and 1 can chopped tom!. with chili's (the mex!. blend) cook until very hot!. Remove from heat and stir in cream cheese until smooth!. You can serve like that or bake in oven 350 about 20min!., until nice and bubbly!.Www@FoodAQ@Com
