Carefully score the rind so it will come off easier, then simply slip the skin off and remove the seed !. Then just eat the whitish fruit, They go really well with vanilla icecream!.

It should be very sweet so it sounds like you scored an unripe fruit!. I'm not sure if you can ripen them up a little more by putting them in a paper bag with a ripe banana!.

considering i LOVE LOVE to eat them and us Asian people LOVE it!. first you wash it just in case there were any bugs etc on it!. then you take off the stem if there is one!. if there isn't then start from where the stem would be!. peel from there!. then eat it!. eat the white part and throw away the seed!. or you can take the seed and try growing it!.Www@FoodAQ@Com

crack open, pop the little fleshy thing in your mouth, spit out seed, if this is no good then go to an asian food store and buy the canned ones, we eat them as is, or freeze them, smoothies, i think they make a flavored bubble tea also!.Www@FoodAQ@Com

Lychees can be eaten raw, and the only pre they need is you will need to remove the hard skin which can be peeled off in sections, to get to the edible white middle!.
