How to make my dal creamier?!


Question: How to make my dal creamier!?
I cook red lentils in water with garlic, onion, Madras curry powder or garam masala, and tomatoes, and it tastes fine, but it comes out with a slightly powdery taste (texture!?) which my wife doesn't like!. I've had dal in India and parripu in Sri Lanka, as well as dal in Indian restaurants in the States, and it's usually very creamy!. How can I get my dal creamy like that!? What do they add!? Is it coconut milk, yogurt, or some kind of oil!?Www@FoodAQ@Com

Red lentils cook in about 1/2 hour, but cooking them longer makes them creamier!. You could add a little coconut milk (light) or even a little water which should work!. If you use yogurt, make sure to warm it up with a little flour separately or it will break!.

I hope you are using finely chopped garlic and onions and then really cooking the spices in the oil, because the turmeric in the curry will be chalky if you don't!.

Experiment with other dals as well!. I prefer yellow split peas to red lentils!.Www@FoodAQ@Com

Adding coconut milk, cream or yogurt will do the trick but the real secret is taking out a cup or so of the cooked dal and mashing it up really well!. Then just stir it back into the rest of the dal!. This make a great thickener without any of the extra calories!Www@FoodAQ@Com
