You probably can make california rolls with out the bamboo mat but it won't be as neat and put togethar!.
You can use "free hand" and kind of shape it togethar or you can use a mixture of foil & wax paper!.
The bamboo mats are probably the best if you really want to make pretty california rolls!.

If there is an asian market near you they do have a mold that help you make sushi!. Its made out of plastic!.Www@FoodAQ@Com
