One way to use fresh or frozen raw salmon for sushi is to cure it!. Coat the fillet with salt, sugar, pepper, lemon juice and liquor (brandy or vodka work)!. wrap the fish tightly with plastic wrap and weigh it down with plates or full cans of vegetables!. Leave it in the fridge for 5 days, rinse, slice thin and enjoy!.Www@FoodAQ@Com
What makes sushi taste great is the freshness of the fish!. If you try to eat it raw after freezing, it will taste extemely fishy not to mention the smell!. Don't do it!. You could make lox with it if you want to eat it raw, but this means curing and would take a couple of days at least!.Www@FoodAQ@Com
No !.!.!. and unless you got sushi-grade salmon, you wouldn't even want to use it fresh!. You'd know if you got sushi grade salmon, because it's AT LEAST $30/lb!.!.!.!.!.!.and I doubt that you'd have frozen that:)Www@FoodAQ@Com
