There are two varieties of Cardamoms: Green pod, and Brown pod!.

Green pod Cardamom are smaller (about half the size of Brown color pods)!. Green pods have much stronger flavor than the brown pods!.

In India, green pods are used as mouth fresheners!. They are sweet flavored!. When you bite on the tiny black seeds the flavor explodes in your mouth!. Green pods are also used in making Garam Masala Chai (Hot tea latte)!. Green pods are used to flavor desserts!.
Green pods in India foods are comparable to Vanilla in western cuisines!.

The brown pods are basically used in making Indian Curries and Biryani!. They are not used as mouth fresheners!. After the cooking is done, the pods should be removed!. Brown cardamom, Cinnamon, Cloves, and Nutmeg together give the warm aroma to curries!.

All the food tastes are acquired!. I am Desi (born in India), I love the cardamoms green or Brown!.Www@FoodAQ@Com
