Why is calamari not a main dish at most seafood restauraunts?!


Question: Why is calamari not a main dish at most seafood restauraunts!?
I love calamari, but at almost every restauraunt i've been to it is an appetizer!. Why!?Www@FoodAQ@Com


Answers:
As a former chef, I have only combined it in mains like Frito Miso, the Italian mixed seafood platter, in Greek dishes, some Asian one like Chinese and Thai!.

It is not so much it is not filling but that it has 2 cooking levels, either fast and hot like with fried calamari, or long and slow, like in pasta sauces or seafood stews, I have used it in Spanish paella and french boullibaise, as a complement to the other fish, shellfish and mollusk in them, sometimes you have to look to maybe foreign or Asian cuisine to find more, In Thailand they even make curries with it cuttlefish a larger version and in Japan sushi is made with it but like octopus and others like it it is blanched in the "dashi" broth to firm it up not to cook it!.Www@FoodAQ@Com

I just think it's easier to market bite-sized pieces as an appetizer!. Plus, they can charge you for that and then an entree too! Just order an appetizer yourself and order the sides a la carte!.Www@FoodAQ@Com
