Hawaiian food for b-day party...?!

Question: Hawaiian food for b-day party!.!.!.!?
My husband and I went to Oahu, Hawaii for our honeymoon in 2007!. I want to make some luau style foods SIMILAR TO THE ONES WE HAD THERE (therefore, not Hawaiian Punch and potato salad!.!.!.)!. I want to make twice baked potatoes (not Hawaiian, but he loves them), and something with pineapple!.!.!. And I remember they roasted a pig and had some kind of delicious sauce and "fish rolls"!. Do you know how to make that authentic tasting sauce or how to make/where to buy "fish rolls"!?Www@FoodAQ@Com

Answers:
Here are some pretty basic Hawaiian recipes that we grew up with!. Not sure what kind of sauce you had, usually Kalua Pua'a does not have a sauce, other than the juice made when cooking!.

Kalua Pork

5-8 lb pork butt
6 T Hawaiian salt or kosher salt
10 T liquid smoke
6 ea Ti leaves/ or banana leaves
foil

Preheat oven to 400F!.
Slit pork in several places, rub salt and liquid smoke into pork!. Sear pork on all sides!. Wrap pork with ti leaves, then in the foil, place on a small rack in a baking pan,
Bake at 400F for 1 hour, then reduce heat to 350F and continue to bake for 3 hours!. Add sweet potatoes or yams the last 1/2 hrs to the pan!. Shred pork and add juices from the pan to the pork!.

Laulau’s

1 lb luau
12 ea ti leaves
1 1/4 lb pork
3/4 lb salted butterfish
1 T Hawaiian salt

Wash luau and ti leaves; remove stem and fibrous part of the veins!. Cut pork and fish into 6 pieces!. Place pork in bowl, add salt, and work in thoroughly!. Arrange 5 or more luau leaves on the palm of the hand!. Place one piece of pork and one piece of of fish on leaves and fold to form a bundle!. Place laulau on the end of a ti leaf and wrap tightly!. Wrap anohter ti leaf around in the opposite direction forming a flat package!. Tie securly with string!. Make the remaining laulaus!. Steam 4-6 hours or steam in a pressure cooker for 1 hour!. Makes six servings!.
