Callaloo Recipe Using.............?!


Question: Callaloo Recipe Using!.!.!.!.!.!.!.!.!.!.!.!.!.!?
chicken!. I saw a recipie on a website for Chicken Callaloo!. The only thing that turned me off was that it required I use can callaloo!. Any suggestions with using callaloo that IS NOT from a can!?

I would like to do a shrimp callaloo also!. Suggestions!?Www@FoodAQ@Com

I am a former chef from Canada and as it happens I worked in Jamaica at a resort hotel years back, I would suggest either Kale, Red or White Swiss Chard, Mustard Greens or Turnip greens even a combo of all, Collards are to bitter and take a long time to cooked, the shrimp and chicken would be rubber!.

Saute some onions and garlic, if you like spice add some hot stuff, a bit of chicken broth and stew for 20 minutes in that time you can brown the chicken, add it and simmer for 30 minutes more, for the shrimp I would buy peeled and deveined ones saute them in some oil with garlic and seasoning and only add them in the last few minutes to absorb the flavour of the greens!.

I to feel the canned callalo is not quite right for soup or "Rundown" it is o!.k, but with all the fresh greens it is nicer to have them and make them your way, let me know how it turns out, as far as seasoning which I forgot mention, I use Jamaican thyme, bay leaves, allspice and a a bit of scotch bonnet pepper sauce, salt is to your taste along with black or white ground pepper!.Www@FoodAQ@Com

I found this recipe for shrimp or crab callaloo you may want to check out!. I thought it looked good!. you can use chicken or whatever meat you want in either of these recipes!. Or you can use more than one!. Hope it tastes great!
