I would like to correct some misconception about MSG and Chinese cooking!.
First, it is true that many "prepared Chinese foods" available in North America, in cans or as frozen dinners, or from fast food outlets, contain MSG, which is an effective favour enhancer!.
Most Chinese home cooking, in China and in US, do not contain MSG, because that is a bit like cheating!. Most upscale Chinese restaurants in North America go out of their way to alert their customers that they are MSG free!.
Like most things, a bit of MSG probably would do no harm, but a lot is a different matter!.
