They give 2 sauces a spicy green chili sauce (aji) which just really perks up your taste buds!. Another white sauce (which the server could only describe as "white sauce") was also good, some sort of mayo / aioli type thing!. Which is a homemade mayonnaise but you can add your own spices making it far superior to the jarred stuffWww@FoodAQ@Com
hollandaise sauce
1/2 cup butter
4 eggs yolks ,well beaten, 2 eggs,2 1/2 tablespoon of white pepper,1/8 teas spoon salt!.
melt 2 tablespoon butter in top of double boiler,pour gradually into beaten egg yolk,stirring constantly!.return to pan in or over hot water!.add remaining butter by tablespoon,stir after each tablespoon until melted,removed from heat,stir lemon juice,pepper and saltWww@FoodAQ@Com
