I would like a simple recipe for a great mexican dish?!

My all-time home cooked favorite for Mexican is Enchiladas and Mexican Rice!.
It is so easy to do and a lot of the ingredients can come out of a can!. !.!.
No Fat Refried Beans
Enchilada Sauce
diced jalapeno chilis
tomato sauce
From the Dairy Casi !.!.!.
Shreded cheese
buritto wraps
Cheese Sauce (optional)
From the vegetable section !.!.!.
green pepper
garlic
onion
From the staples
Rice
salt
pepper
From the meat market
ground meat or strips (if you want meat in your Enchiadas
To Put it together:
If you are using meat in our enchilada filling !.!.!.!. fry it up and then drain the fat, set aside!.
Preheat your oven to about 350 degrees F!.
Prepare a 9" x 9" or a 9" x 13" casserole (depending on how many you want to make !.!.!. by pouring some of the enchilada sauce onto the bottom!.
Lay a burrito wrap on the counter and layer on some of the fillings you want !.!.!.!. I like bean and cheese!. Some folks like it with beans and meat, or cheese and meat!. Roll up like a cigar and lay into the prepared pan!.
When all the enchilades are nextled into the pan, pour on the rest of the enchilada sauce over the tops!. Cover with foil and place in the heated oven to cook through!.
To make the rice !.!.!.
mince the onion, garlic, and green pepper!.
In a sauce pan pot or dutch over, heat a little oil and saute the onion until translucent!. Add the garlic, add the green pepper!. Saute a little longer!. Add the rice and saute a couple of minutes!. Then add the saucem canned chilis, and enough water to make up a 2 to 1 ratio to the amount of rice your used!.
Bring to a boil!. Cover, reduce the heat to simmer and let cook UNDISTURBED while you wait for the enchilada's to bake!.
Near the end of baking, uncover the enchiladas and either pour on some cheese sauce or sprinkle some more cheese!. Return to the oven, uncovered, for the cheese to melt and warm through!.
Oh yes, salt and pepper !.!.!.!. to your taste, a little at a time as you go along nstead of adding it all at once!.
This and a green salad is great!. My daughter-in-law and son also bake up home made cheesy bread sticks and make a guacamole salad when they are making a big bash of it!. As for me, I'm just happy with the rice and enchiladas!.Www@FoodAQ@Com
