Ok I really need a recipe...?!


Question: Ok I really need a recipe!.!.!.!?
When we were little my mom would take us to this Spanish market to get treats and I always got this thing called papas rellenos!. My spelling might be off, but it's basically mashed potatoes stuffed with picadillo and then kinda fried!. So if anybody out there knows a really good recipe for this I'd be really grateful!. I used to love this and I haven't had it in about 12-13 years!.

Papas Rellenos--My Aunt taught me how to make these!.!.!.I know you said you remember the pico in yours and you can make it either way, with pico, ground beef or even both

3 large potatoes, peeled and boiled
2 eggs, beaten
Dry bread crumbs
1 lb!. Seasoned ground beef or Picadillo
Flour
Cooking oil

Mash potatoes and let cool!.

Scoop a golf-ball sized amount of mashed potatoes, split handful in half, making a little bowl out of each half!. Stuff indentation in each half with ground beef or picadillo!.

Bring two halves together and smooth to make a round ball!. Dip balls into beaten egg, then roll in flour until lightly covered!. Dip ball in egg again and roll in bread crumbs to coat thoroughly!.

Add oil to frying pan to 1" deep!. Heat oil to frying stage and drop Pape Rellenos into hot oil!.Www@FoodAQ@Com

Papas rellenos > potato rolls!. I don't have a recipe!.!.!.sniff!.!.!.but a close match would be what is called a gordita > a hand made corn pattie stuffed with picadillo (seasoned ground beef) and topped with lechugas, tomato y queso!. The gordita "shells" are sometimes available in grocery stores, with the tortillas or in the "ethnic" foods aisle!. Of course all of that stuff is widely available here in North Mexico!.!.!.I mean South Texas!.Www@FoodAQ@Com
